All through college Arturo Daly enjoyed the warm toasted sandwiches and relaxed atmosphere of Potbelly Sandwich Shop in Chicago. In 2011, he partnered with Danytsia Enriquez to bring the experience to El Paso.
"The original Potbelly opened in 1977, but it took a while for them to start franchising," Enriquez said. "It was always a dream to open one here, and last year we finally had our chance."
Potbelly is known for its variety of toasted sandwiches like the Wreck, which is piled high with salami, roast beef, turkey, ham and Swiss cheese. Patrons can top off their meal with a shake, malt or oatmeal chocolate chip cookie.
"While it's not planned yet, our ultimate dream would be to open another location near UTEP to bring them that same college experience," Enriquez said.
Pick up lunch at Potbelly to the tune of live music on Thursday and Fridays for as little as $5.
